Twice-cooked Pork and Mapo Tofu, two of the most recognizable dishes in China. The seasoning has been around for more than 300-years and the two main ingredients are the result of migration patterns over the centuries. To meet the needs of diners, most of the bean paste is industrially produced and after fermentation the taste of Sichuan is exported across the world, eventually making its way to the plates of global citizens.
